- 1 lb chicken, cut into pieces
- 1/2 lb Andouille sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups okra, sliced
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Cooked rice for serving
- Green onions, chopped for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Brown the chicken pieces in a single layer until golden, about 5-7 minutes.
- Sauté the Andouille sausage for another 5 minutes.
- Add the diced onion, bell pepper, celery, and minced garlic; cook for 5 more minutes.
- Incorporate the chicken broth, diced tomatoes, and sliced okra.
- Season with Cajun seasoning, salt, and pepper.
- Simmer for 30-40 minutes.
- Serve over cooked rice and garnish with chopped green onions.
Notes
Gumbo tastes even better the next day as flavors meld. Customize with shrimp or other vegetables if desired.
