Ingredients

  • 1 lb chicken, cut into pieces
  • 1/2 lb Andouille sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups okra, sliced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Cooked rice for serving
  • Green onions, chopped for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Brown the chicken pieces in a single layer until golden, about 5-7 minutes.
  3. Sauté the Andouille sausage for another 5 minutes.
  4. Add the diced onion, bell pepper, celery, and minced garlic; cook for 5 more minutes.
  5. Incorporate the chicken broth, diced tomatoes, and sliced okra.
  6. Season with Cajun seasoning, salt, and pepper.
  7. Simmer for 30-40 minutes.
  8. Serve over cooked rice and garnish with chopped green onions.

Notes
