Description

A comforting and delicious Chicken Burrito Bowl Casserole packed with flavors, perfect for busy weeknights or cozy gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Optional toppings: sour cream, avocado, fresh cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cooked rice, black beans, corn, salsa, and taco seasoning in a large mixing bowl.
  3. Grease your casserole dish to prevent sticking.
  4. Spread half of the chicken mixture evenly across the bottom of the dish.
  5. Sprinkle half of the cheese on top.
  6. Layer the remaining chicken mixture on top and finish with the rest of the cheese.
  7. Cover the dish tightly with foil and bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  9. Let cool slightly and serve with optional toppings.

Notes

Make ahead by prepping the casserole the night before. It can be baked directly from the fridge.
