- 2 cups cooked chicken, shredded
- 2 cups cooked rice
- 1 can black beans, rinsed and drained
- 1 cup corn, drained
- 1 cup salsa
- 1 teaspoon taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, avocado, fresh cilantro
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, cooked rice, black beans, corn, salsa, and taco seasoning in a large mixing bowl.
- Grease your casserole dish to prevent sticking.
- Spread half of the chicken mixture evenly across the bottom of the dish.
- Sprinkle half of the cheese on top.
- Layer the remaining chicken mixture on top and finish with the rest of the cheese.
- Cover the dish tightly with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
- Let cool slightly and serve with optional toppings.
Notes
Make ahead by prepping the casserole the night before. It can be baked directly from the fridge.
