Description

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherries, pitted and halved
  • 1 cup sugar snap peas, trimmed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup goat cheese, crumbled
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water until the water runs clear, removing any bitterness.
  2. Combine the rinsed quinoa with 2 cups of water in a medium saucepan and bring to a boil.
  3. Reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed.
  4. Allow the quinoa to cool completely.
  5. In a large mixing bowl, combine the cooled quinoa, halved cherries, trimmed sugar snap peas, and chopped red onion, stirring gently.
  6. Whisk together the apple cider vinegar, lemon juice, olive oil, salt, and pepper in a small bowl.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Sprinkle the crumbled goat cheese on top before serving.

Notes

Make-ahead by preparing quinoa and chopping vegetables a day in advance. Customize with nuts or herbs for added flavor.
