Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherries, pitted and halved
- 1 cup sugar snap peas, trimmed
- 1/4 cup red onion, finely chopped
- 1/4 cup goat cheese, crumbled
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water until the water runs clear, removing any bitterness.
- Combine the rinsed quinoa with 2 cups of water in a medium saucepan and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 15 minutes or until the water is absorbed.
- Allow the quinoa to cool completely.
- In a large mixing bowl, combine the cooled quinoa, halved cherries, trimmed sugar snap peas, and chopped red onion, stirring gently.
- Whisk together the apple cider vinegar, lemon juice, olive oil, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle the crumbled goat cheese on top before serving.
