Description

Delightful cupcakes combining rich chocolate cake with a creamy cream cheese filling, perfect for any occasion.


Ingredients

  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar
  • 1 cup water
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • 1 egg
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. Combine dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Mix wet ingredients: In another bowl, stir together the vegetable oil, vanilla, vinegar, and water.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Prepare the cream cheese filling: Beat cream cheese with powdered sugar and egg until smooth.
  6. Fill the cupcake liners halfway with chocolate batter, add cream cheese mixture, then top with more chocolate batter.
  7. Add chocolate chips on top of each cupcake.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Cupcakes are best stored in an airtight container. They can be made a day in advance and taste even better after the flavors meld.
