- 1 cup all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 tablespoon vinegar
- 1 cup water
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- 1 egg
- ½ cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
- Combine dry ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- Mix wet ingredients: In another bowl, stir together the vegetable oil, vanilla, vinegar, and water.
- Combine wet and dry: Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Prepare the cream cheese filling: Beat cream cheese with powdered sugar and egg until smooth.
- Fill the cupcake liners halfway with chocolate batter, add cream cheese mixture, then top with more chocolate batter.
- Add chocolate chips on top of each cupcake.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
Notes
Cupcakes are best stored in an airtight container. They can be made a day in advance and taste even better after the flavors meld.
