  • For the Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 1/2 cup sour cream
    • 1 tsp vanilla extract
    • 1 large egg
  • For the Cake Base:
    • 1 cup yellow cake mix
    • 1/4 cup unsalted butter, melted
    • 1/4 cup water
    • 1/4 cup sprinkles
  • For Topping:
    • Whipped cream
    • Additional sprinkles

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the softened cream cheese, sugar, sour cream, and vanilla extract. Beat until smooth.
  3. Add the egg and mix until fully incorporated.
  4. In another bowl, mix the yellow cake mix, melted butter, and water until a batter forms. Fold in the sprinkles.
  5. Line a mini muffin tin with paper liners and spoon a small amount of cake batter into each liner, filling them about halfway.
  6. Top each with a spoonful of the cheesecake filling, then add a little more cake batter on top.
  7. Bake for 18-20 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
  8. Let cool completely before removing from the tin and topping with whipped cream and additional sprinkles.
