- For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 1 large egg
- For the Cake Base:
- 1 cup yellow cake mix
- 1/4 cup unsalted butter, melted
- 1/4 cup water
- 1/4 cup sprinkles
- For Topping:
- Whipped cream
- Additional sprinkles
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the softened cream cheese, sugar, sour cream, and vanilla extract. Beat until smooth.
- Add the egg and mix until fully incorporated.
- In another bowl, mix the yellow cake mix, melted butter, and water until a batter forms. Fold in the sprinkles.
- Line a mini muffin tin with paper liners and spoon a small amount of cake batter into each liner, filling them about halfway.
- Top each with a spoonful of the cheesecake filling, then add a little more cake batter on top.
- Bake for 18-20 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.
- Let cool completely before removing from the tin and topping with whipped cream and additional sprinkles.
