  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese
  • 1/2 cup sour cream
  • 1 cup mozzarella cheese, shredded
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Warm the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, cooking until soft and fragrant—about 3-4 minutes.
  3. Mix the filling: In a large bowl, combine the shredded chicken, chopped spinach, cream cheese, sour cream, shredded mozzarella, chicken broth, thyme, salt, and pepper. Blend until everything is well-incorporated.
  4. Pour the mixture into the pie crust, spreading it evenly.
  5. Cover with another pie crust, sealing the edges by crimping them and cut slits into the top crust to allow steam to escape.
  6. Bake the pie in the preheated oven for 30-35 minutes, or until the top is golden and crisp.
  7. Cool before serving to allow the filling to set.
