- 2 cups cooked chicken, shredded
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese
- 1/2 cup sour cream
- 1 cup mozzarella cheese, shredded
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat your oven to 375°F (190°C).
- Warm the olive oil in a skillet over medium heat. Add the diced onion and minced garlic, cooking until soft and fragrant—about 3-4 minutes.
- Mix the filling: In a large bowl, combine the shredded chicken, chopped spinach, cream cheese, sour cream, shredded mozzarella, chicken broth, thyme, salt, and pepper. Blend until everything is well-incorporated.
- Pour the mixture into the pie crust, spreading it evenly.
- Cover with another pie crust, sealing the edges by crimping them and cut slits into the top crust to allow steam to escape.
- Bake the pie in the preheated oven for 30-35 minutes, or until the top is golden and crisp.
- Cool before serving to allow the filling to set.
Notes
For added convenience, use rotisserie chicken and feel free to customize with additional veggies or different types of cheese.
