- 4 bell peppers (any color)
- 1 pound ground chicken
- 1 cup cooked rice (or quinoa)
- 1 cup feta cheese, crumbled
- 1/2 cup olives, chopped
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup marinara sauce
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds.
- Heat olive oil in a large skillet and add ground chicken; cook until browned (about 5-7 minutes).
- Stir in cooked rice, feta cheese, olives, oregano, garlic powder, salt, and pepper; mix well.
- Stuff each bell pepper with the chicken mixture and pack it generously.
- Place the stuffed peppers in a baking dish and pour marinara sauce over them.
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes until peppers are tender and tops are golden brown.
- Serve warm with sides like Greek salad or crusty bread.
