Ingredients

  • 4 bell peppers (any color)
  • 1 pound ground chicken
  • 1 cup cooked rice (or quinoa)
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, chopped
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a large skillet and add ground chicken; cook until browned (about 5-7 minutes).
  4. Stir in cooked rice, feta cheese, olives, oregano, garlic powder, salt, and pepper; mix well.
  5. Stuff each bell pepper with the chicken mixture and pack it generously.
  6. Place the stuffed peppers in a baking dish and pour marinara sauce over them.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes until peppers are tender and tops are golden brown.
  9. Serve warm with sides like Greek salad or crusty bread.
