Description

Enjoy the smoky-sweet flavors of Huli Huli Chicken that brings a taste of Hawaii to your table.

Ingredients

Scale
  • 2 lbs chicken thighs (bone-in, skin-on)
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup pineapple juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • Green onions and sesame seeds for garnish

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine soy sauce, brown sugar, ketchup, pineapple juice, vegetable oil, grated ginger, minced garlic, and black pepper. Whisk together until the ingredients meld into a unified marinade.
  2. Marinate the Chicken: Transfer the chicken thighs into a large ziplock bag. Pour the marinade over the chicken, ensuring every piece is well-coated. Seal the bag tightly, squeezing out as much air as possible to lock in flavor. Refrigerate for at least two hours—overnight is even better for optimal flavor infusion.
  3. Preheat the Grill: When ready to cook, ignite the grill and preheat it to medium-high heat.
  4. Grill the Chicken: Remove the chicken from the marinade, letting the excess drip off before discarding it. Place the chicken on the grill, cooking for about 6-8 minutes on each side, or until the internal temperature reaches 165°F and char marks are visible.
  5. Rest and Garnish: Remove the chicken from the grill and allow it to rest for a few minutes. Just before serving, garnish with finely chopped green onions and a sprinkle of sesame seeds.

Notes

Marinate the chicken overnight for the best flavor and avoid overcrowding the grill for even cooking.
