  3. Drain the potatoes and let them cool in a colander.
  4. Mix the coating: In a bowl, combine flour, baking powder, salt, and pepper.
  5. Heat enough oil in a deep frying pan over medium heat until sizzling hot.
  6. Dredge the cooled slices in the flour mixture, shaking off excess flour.
  7. Fry the coated potato slices in batches for about 3-4 minutes until golden brown.
  8. Drain the scallops on a paper towel-lined plate and serve hot.
