- Drain the potatoes and let them cool in a colander.
- Mix the coating: In a bowl, combine flour, baking powder, salt, and pepper.
- Heat enough oil in a deep frying pan over medium heat until sizzling hot.
- Dredge the cooled slices in the flour mixture, shaking off excess flour.
- Fry the coated potato slices in batches for about 3-4 minutes until golden brown.
- Drain the scallops on a paper towel-lined plate and serve hot.
