- 8 oz (225 g) cream cheese, softened β the creamy base of the dip; softening it fully ensures a smooth, lump-free texture.
- 1 cup shredded sharp cheddar cheese β provides bold, tangy cheese flavor and helps the dip turn golden and bubbly as it bakes.
- Β½ cup mayonnaise β adds extra creaminess and a subtle tang that rounds out the richness of the cheese.
- 1 small can (4 oz / 113 g) diced green chiles, drained β brings a mild, slightly smoky flavor and a pop of color without overwhelming heat.
For Finishing β¨
- Freshly cracked black pepper, optional β adds a subtle warmth and finishing touch.
- Chopped green onion or parsley, optional β adds freshness, color, and a mild bite.
- Extra shredded cheddar cheese, optional β sprinkle on top before baking for an even more golden, cheesy crust.
Instructions
Preheat your oven to 350Β°F (175Β°C). Lightly grease a small 8Γ8-inch baking dish or a similar oven-safe dish to prevent sticking and make cleanup easier.
Place the softened cream cheese in a medium mixing bowl. Stir or beat until it’s smooth and creamy with no lumps remaining. If your cream cheese is still a bit firm, let it sit at room temperature for an additional 10β15 minutes before mixing β this step makes a big difference in achieving a silky-smooth final texture.
Add the shredded cheddar cheese, mayonnaise, and drained diced green chiles to the bowl with the cream cheese. Stir everything together until the ingredients are evenly distributed and the mixture is thick and creamy. Be careful not to overmix once everything is combined, as this can affect the final texture of the baked dip.
Spoon the cheese mixture into your prepared baking dish and spread it evenly with a spatula. If you’d like an extra golden, cheesy finish, sprinkle a bit of additional shredded cheddar over the top before baking.
Bake uncovered for approximately 20β25 minutes, or until the dip is hot, bubbly, and melted throughout. For an even more golden top, place it under the broiler for 1β2 minutes at the end of baking. Watch it closely during this step, as the cheese can brown very quickly under the broiler.
Remove the dip from the oven and let it rest for about 5 minutes. This short resting period allows the cheese to settle slightly while keeping the dip warm and perfectly scoopable, rather than overly runny straight out of the oven.
Sprinkle the dip with chopped green onion, parsley, or freshly cracked black pepper if desired. Serve immediately while warm, alongside your favorite dippers.
