- 1 1/2 cups graham cracker crumbs

- 1 cup white chocolate, melted
- 1 cup sugar

- 1/4 cup raspberry puree
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare the crust: Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Add melted white chocolate, sugar, and vanilla; mix until blended.
- Incorporate the eggs one at a time, mixing thoroughly after each addition.
- Gently fold in fresh raspberries and raspberry puree.
- Pour the mixture over the crust and bake for 50-60 minutes until the center is set but slightly jiggles.
- Turn off the oven and crack the door open, letting cheesecake cool for an hour.
- Chill in the refrigerator for at least four hours, or overnight.
- Run a knife around the edges to loosen, release the springform, and slice. Garnish with additional raspberries.
