  • 1 cup sugar

  • 1 cup fresh raspberries
  • 1/4 cup raspberry puree

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the crust: Mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add melted white chocolate, sugar, and vanilla; mix until blended.
  4. Incorporate the eggs one at a time, mixing thoroughly after each addition.
  5. Gently fold in fresh raspberries and raspberry puree.
  6. Pour the mixture over the crust and bake for 50-60 minutes until the center is set but slightly jiggles.
  7. Turn off the oven and crack the door open, letting cheesecake cool for an hour.
  8. Chill in the refrigerator for at least four hours, or overnight.
  9. Run a knife around the edges to loosen, release the springform, and slice. Garnish with additional raspberries.
