Ingredients

  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup heavy whipping cream
  • 0.5 teaspoon vanilla extract
  • Ice cubes

Instructions

  1. Blend the fresh lemon juice, sugar, raspberries, and 1 cup of cold water until smooth.
  2. Strain the blended mixture through a fine mesh sieve into a large pitcher.
  3. Combine the remaining 3 cups of cold water in the pitcher and stir well.
  4. Whip the heavy whipping cream with vanilla extract until soft peaks form.
  5. Fold 1 cup of the lemonade mixture into the whipped cream gently.
  6. Serve the lemonade over ice and top with the whipped mixture, garnishing with fresh raspberries.
