Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 carrots, sliced
  • 3 green onions, chopped
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the sliced red and yellow bell peppers, broccoli, snap peas, and carrots. Stir-fry for about 5-7 minutes until tender-crisp.
  3. Prepare the peanut sauce by whisking together peanut butter, soy sauce, honey (or maple syrup), and lime juice in a small bowl.
  4. Combine the peanut sauce with the stir-fried vegetables and toss to coat.
  5. Add in the chopped green onions and allow to cook for an additional 2-3 minutes.
  6. Season with salt and pepper to taste.
