- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 carrots, sliced
- 3 green onions, chopped
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1 tablespoon honey or maple syrup
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the sliced red and yellow bell peppers, broccoli, snap peas, and carrots. Stir-fry for about 5-7 minutes until tender-crisp.
- Prepare the peanut sauce by whisking together peanut butter, soy sauce, honey (or maple syrup), and lime juice in a small bowl.
- Combine the peanut sauce with the stir-fried vegetables and toss to coat.
- Add in the chopped green onions and allow to cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
