- 2 large sweet potatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- In a skillet, heat olive oil over medium heat. Add chickpeas, smoked paprika, salt, and pepper, and cook for 5-7 minutes.
- Stir in the BBQ sauce and cook for an additional 2-3 minutes until heated through.
- Once the sweet potatoes are done, slice them open and fill with the BBQ chickpea mixture.
- Garnish with fresh parsley if desired and serve warm.
