Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork, then place them on a baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes, or until tender.
  4. In a skillet, heat olive oil over medium heat. Add chickpeas, smoked paprika, salt, and pepper, and cook for 5-7 minutes.
  5. Stir in the BBQ sauce and cook for an additional 2-3 minutes until heated through.
  6. Once the sweet potatoes are done, slice them open and fill with the BBQ chickpea mixture.
