- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup BBQ sauce
- 1/4 cup bourbon
- 1 tsp smoked paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 8 slices bacon
- 2 cups mashed potatoes
- 1/4 cup milk
- 2 tbsp butter
- 1/4 cup chives, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, ground pork, breadcrumbs, onion, garlic, BBQ sauce, bourbon, smoked paprika, salt, and pepper.
- Mix until well combined and form into cupcake shapes.
- Wrap each meatloaf cupcake with a slice of bacon.
- Place the wrapped cupcakes in a muffin tin and bake for 25-30 minutes.
- While the meatloaf cupcakes are baking, prepare the mashed potatoes by mixing them with milk, butter, and chives.
- Once the meatloaf cupcakes are cooked, remove them from the oven and let them cool slightly.
- Top each meatloaf cupcake with a generous dollop of potato frosting.
- Serve warm and enjoy!
Notes
- For a spicier kick, add some hot sauce to the meat mixture.
- These can be made ahead of time and reheated before serving.
