Description

Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups baby spinach
  • Salt and pepper to taste
  • Parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper and place them skin side down in the skillet.
  3. Pan-sear for 4-5 minutes per side until cooked through, then remove and set aside.
  4. Sauté the minced garlic in the same skillet until fragrant.
  5. Add the heavy cream and bring to a simmer, stirring occasionally.
  6. Stir in the Parmesan cheese and sun-dried tomatoes until the cheese melts.
  7. Incorporate the spinach and fold it gently until wilted.
  8. Return the salmon to the skillet and let it soak in the sauce.
  9. Serve warm, garnished with parsley if desired.
