Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the salmon fillets with salt and pepper and place them skin side down in the skillet.
- Pan-sear for 4-5 minutes per side until cooked through, then remove and set aside.
- Sauté the minced garlic in the same skillet until fragrant.

- Stir in the Parmesan cheese and sun-dried tomatoes until the cheese melts.
- Incorporate the spinach and fold it gently until wilted.
- Return the salmon to the skillet and let it soak in the sauce.
- Serve warm, garnished with parsley if desired.
