A quick and easy Tuna Pasta Salad recipe perfect for lunch or a light dinner.
Ingredients

- 8 oz pasta (elbow or rotini)
- 1 can (5 oz) tuna, drained
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooled pasta, tuna, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, mix together the mayonnaise, lemon juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add other vegetables like bell peppers or olives.
- This salad can be made a day in advance and stored in the refrigerator.
- For a lighter version, use Greek yogurt instead of mayonnaise.
