Description

A delicious and cheesy dish featuring zucchini layered with three types of cheese, perfect for a comforting meal.


Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  3. In a baking dish, spread a layer of marinara sauce on the bottom.
  4. Layer half of the zucchini slices over the sauce.
  5. Spread half of the ricotta mixture over the zucchini.
  6. Sprinkle half of the mozzarella and Parmesan cheese over the ricotta layer.
  7. Repeat the layers with the remaining zucchini, ricotta mixture, and cheeses.
  8. Top with the remaining marinara sauce and a sprinkle of mozzarella and Parmesan.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

  • For a spicier version, add red pepper flakes to the marinara sauce.
  • Feel free to substitute other vegetables like eggplant or bell peppers.
  • This dish can be made ahead of time and reheated before serving.
