- 2 medium zucchinis, sliced
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup marinara sauce
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer half of the zucchini slices over the sauce.
- Spread half of the ricotta mixture over the zucchini.
- Sprinkle half of the mozzarella and Parmesan cheese over the ricotta layer.
- Repeat the layers with the remaining zucchini, ricotta mixture, and cheeses.
- Top with the remaining marinara sauce and a sprinkle of mozzarella and Parmesan.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, add red pepper flakes to the marinara sauce.
- Feel free to substitute other vegetables like eggplant or bell peppers.
- This dish can be made ahead of time and reheated before serving.
