Ingredients

  • Tortillas (flour, corn, or whole wheat)
  • Grilled chicken, turkey, or tofu
  • Lettuce
  • Bell peppers
  • Cucumbers
  • Carrots
  • Greek yogurt ranch or hummus
  • Fresh basil, cilantro, or parsley
  • Lemon or lime juice or zest

Instructions

  1. Marinate the protein by combining olive oil, lemon juice, salt, and pepper; coat the protein and marinate for at least 30 minutes.
  2. Cook the marinated protein on a grill pan over medium-high heat for about 5-7 minutes per side until golden brown.
  3. Chop the vegetables into bite-sized pieces.
  4. Mix the dressing with a splash of citrus juice in a mixing bowl.
