  • 4 bell peppers (any color)
  • 1 lb chicken breast, diced
  • 1 cup pineapple chunks
  • 1/2 cup teriyaki sauce
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Heat olive oil in a skillet over medium heat.
  4. Add diced onion and minced garlic, sauté until fragrant, about 3-5 minutes.
  5. Add diced chicken and cook until golden and cooked through, about 5-7 minutes.
  6. Stir in pineapple and teriyaki sauce; cook for 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Stuff the mixture into each bell pepper and place them in a baking dish.
  9. Cover with foil and bake for 25-30 minutes.
  10. Remove the foil and bake for an additional 10 minutes.
  11. Garnish with green onions and serve warm.

Notes

For a spicier kick, add red pepper flakes. These peppers can be prepared a day in advance and stored in the fridge before baking.
