- 4 bell peppers (any color)
- 1 lb chicken breast, diced
- 1 cup pineapple chunks
- 1/2 cup teriyaki sauce
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Heat olive oil in a skillet over medium heat.
- Add diced onion and minced garlic, sauté until fragrant, about 3-5 minutes.
- Add diced chicken and cook until golden and cooked through, about 5-7 minutes.
- Stir in pineapple and teriyaki sauce; cook for 2-3 minutes.
- Season with salt and pepper to taste.
- Stuff the mixture into each bell pepper and place them in a baking dish.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes.
- Garnish with green onions and serve warm.
Notes
For a spicier kick, add red pepper flakes. These peppers can be prepared a day in advance and stored in the fridge before baking.
