Ingredients

  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the ground beef or turkey over medium heat until browned.
  2. Add the taco seasoning and follow package instructions.
  3. In a large bowl, combine the cooked rice, black beans, corn, and diced tomatoes.
  4. Stir in the cooked meat mixture.
