- 8 oz rotini pasta
- 2 cups rotisserie chicken, shredded
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1 cup shredded cheddar cheese
- 1/2 cup taco dressing
- 1/4 cup fresh cilantro, chopped
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- In a large bowl, combine the cooked pasta, shredded rotisserie chicken, cherry tomatoes, black beans, corn, red onion, bell pepper, and cheddar cheese.
- Pour the taco dressing over the salad and toss to combine.
- Garnish with fresh cilantro before serving.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
