Ingredients

  • 8 oz rotini pasta
  • 2 cups rotisserie chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup taco dressing
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta, shredded rotisserie chicken, cherry tomatoes, black beans, corn, red onion, bell pepper, and cheddar cheese.
  3. Pour the taco dressing over the salad and toss to combine.
  4. Garnish with fresh cilantro before serving.
