Taco Cupcakes Delight is a creative and fun twist on traditional taco night, combining the flavors of tacos with the presentation of cupcakes.
Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup salsa
- 1 package of cupcake liners
- 1 box of cornbread mix
- 1 egg
- 1/3 cup milk
- Chopped lettuce and tomatoes for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning to the beef and follow package instructions.
- Prepare the cornbread mix according to package instructions, adding the egg and milk.
- Line a muffin tin with cupcake liners and fill each liner halfway with cornbread batter.
- Top the cornbread batter with a spoonful of the seasoned beef.
- Top the beef with shredded cheddar cheese.
- Bake in the preheated oven for 15-20 minutes or until the cornbread is cooked through.
- Remove from the oven and let cool slightly.
- Top each cupcake with sour cream, salsa, and garnish with lettuce and tomatoes before serving.
Notes
- Feel free to customize toppings based on personal preference.
- These can be made ahead of time and reheated before serving.
- For a vegetarian option, substitute ground beef with black beans or lentils.
