Ingredients

- 1 cup mashed sweet potatoes
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
Instructions
- In a large bowl, combine the mashed sweet potatoes, milk, egg, and melted butter.
- In another bowl, mix the flour, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Serve warm with your favorite toppings.
Notes
- For a vegan option, substitute the egg with a flax egg and use plant-based milk.
- These pancakes can be stored in the refrigerator for up to 3 days.
