- 2 medium sweet potatoes, peeled and diced

- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 avocado, sliced
- 1/4 cup cilantro, chopped
- 1/2 cup chipotle sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with olive oil, salt, and black pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a separate pot, heat the black beans and corn until warmed through.
