Ingredients

  • 8 oz pasta
  • 1 lb Italian sausage
  • 2 sweet bell peppers, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the sausage and cook until browned, breaking it apart as it cooks.
  4. Add the onion and garlic, sautéing until the onion is translucent.
  5. Stir in the sliced sweet peppers and cook until they are tender.
  6. Add the diced tomatoes and Italian seasoning; simmer for 5 minutes.
  7. Combine the cooked pasta with the sausage and pepper mixture; stir well.
  8. Season with salt and pepper to taste.
  9. Serve hot, topped with Parmesan cheese.
