Instructions
- In a mixing bowl, combine the sweet corn, flour, shredded mozzarella cheese, milk, egg, sugar, baking powder, and a pinch of salt. Stir until smooth.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, slightly flattening them.
- Fry until golden brown, about 2-3 minutes, then flip and repeat.
- Remove and place on paper towels to absorb excess oil.
- Serve warm with desired toppings.
