Ingredients

  • 1 cup bell peppers, chopped
  • 1 cup pineapple chunks
  • 1/2 cup onion, chopped
  • 1/2 cup sugar
  • 1/2 cup vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • Cooked rice for serving

Instructions

  1. In a bowl, mix sugar, vinegar, soy sauce, and cornstarch to create the sweet and sour sauce.
  2. Heat vegetable oil in a pan over medium heat.
  3. Add diced chicken and cook until browned.
  4. Add chopped onions and bell peppers, cooking until softened.
  5. Stir in pineapple chunks and the sweet and sour sauce.
  6. Simmer for 5-7 minutes until the sauce thickens.
