- 1 cup pineapple chunks

- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- Cooked rice for serving
Instructions
- In a bowl, mix sugar, vinegar, soy sauce, and cornstarch to create the sweet and sour sauce.
- Heat vegetable oil in a pan over medium heat.
- Add diced chicken and cook until browned.
- Add chopped onions and bell peppers, cooking until softened.
- Stir in pineapple chunks and the sweet and sour sauce.
- Simmer for 5-7 minutes until the sauce thickens.
- Serve over cooked rice.
Notes
- For a spicier version, add red pepper flakes.
