Ingredients

  • 1 cup dates, pitted and chopped
  • 1 cup almond flour
  • 1/2 cup oats
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: nuts or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheet with parchment paper.
  3. Stir together the dates, almond flour, oats, coconut oil, vanilla, baking soda, and salt in a large mixing bowl.
  4. Add optional nuts or chocolate chips if desired.
  5. Drop tablespoon-sized portions of dough onto the baking sheet, spaced at least 2 inches apart.
  6. Flatten each cookie slightly with your fingers.
  7. Bake for 10-12 minutes until golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Ensure dates are soft; soak in warm water if necessary. Cool melted coconut oil slightly before mixing.
