- 1 cup dates, pitted and chopped
- 1 cup almond flour
- 1/2 cup oats
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: nuts or dark chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line your baking sheet with parchment paper.
- Stir together the dates, almond flour, oats, coconut oil, vanilla, baking soda, and salt in a large mixing bowl.
- Add optional nuts or chocolate chips if desired.
- Drop tablespoon-sized portions of dough onto the baking sheet, spaced at least 2 inches apart.
- Flatten each cookie slightly with your fingers.
- Bake for 10-12 minutes until golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
