Instructions

  2. Cream together the softened butter and sugar in a large bowl until light and fluffy—about 3 minutes.
  3. Beat in the eggs, one at a time, fully incorporating each before adding the next.
  4. Combine flour, baking powder, and salt in another bowl.
  5. Gradually mix the dry mixture into the creamed butter mixture, stirring until just blended.
  6. Fold in the diced strawberries evenly throughout the dough.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool completely on wire racks.
  10. Spread whipped cream or frosting on the flat side of one cookie and gently sandwich it with another.
