Instructions
- Preheat your oven to 350°F (175°C).

- Beat in the eggs, one at a time, fully incorporating each before adding the next.
- Combine flour, baking powder, and salt in another bowl.
- Gradually mix the dry mixture into the creamed butter mixture, stirring until just blended.
- Fold in the diced strawberries evenly throughout the dough.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool completely on wire racks.
- Spread whipped cream or frosting on the flat side of one cookie and gently sandwich it with another.
