- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 2 tablespoons granulated sugar for strawberries
- 1 1/2 cups crushed shortbread cookies or graham crackers
- 1/4 cup unsalted butter, melted
- 6 large crepes or thin cake layers
Instructions
- In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract with an electric mixer until smooth and creamy.
- Gently fold in the whipped heavy cream until combined.
- In a separate bowl, toss the diced strawberries with the 2 tablespoons of granulated sugar and let sit for 10 minutes.
- In another bowl, mix the crushed shortbread cookies with melted butter until the crumbs are well-coated.
- Lay a crepe flat and spread a layer of cheesecake filling, followed by shortcake crumbs and strawberries.
- Roll the crepe tightly, wrapping each roll in plastic wrap, and chill for at least one hour.
- Slice each roll into 1-inch pieces before serving.
Notes
For a lighter version, use Neufchâtel cheese. Customize with different fruits or sauces.
