Delightful rolls combining creamy cheesecake, fresh strawberries, and a crunchy shortcake element.


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 2 tablespoons granulated sugar for strawberries
  • 1 1/2 cups crushed shortbread cookies or graham crackers
  • 1/4 cup unsalted butter, melted
  • 6 large crepes or thin cake layers

Instructions

  1. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract with an electric mixer until smooth and creamy.
  2. Gently fold in the whipped heavy cream until combined.
  3. In a separate bowl, toss the diced strawberries with the 2 tablespoons of granulated sugar and let sit for 10 minutes.
  4. In another bowl, mix the crushed shortbread cookies with melted butter until the crumbs are well-coated.
  5. Lay a crepe flat and spread a layer of cheesecake filling, followed by shortcake crumbs and strawberries.
  6. Roll the crepe tightly, wrapping each roll in plastic wrap, and chill for at least one hour.
  7. Slice each roll into 1-inch pieces before serving.

Notes

For a lighter version, use Neufchâtel cheese. Customize with different fruits or sauces.
