  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/4 cups diced fresh strawberries
  • 1 tablespoon all-purpose flour
  • 1/3 cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin.
  2. Blend cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
  3. Whisk together all-purpose flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Beat eggs, milk, vegetable oil, and vanilla extract together until combined.
  5. Pour the wet mixture into the dry ingredients and stir gently.
  6. Toss diced strawberries in a tablespoon of flour to prevent sinking.
  7. Fold the strawberries into the batter gently.
  8. Combine the remaining flour, sugar, and melted butter for the crumb topping.
  9. Spoon the batter into each muffin cup and add cream cheese filling.
  10. Distribute the crumb topping across each muffin.
  11. Bake for 18 to 22 minutes until golden brown.
  12. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

For a lighter version, consider substituting half of the all-purpose flour with whole wheat flour and reducing the sugar amount.
