- 3 tablespoons granulated sugar
- 3 tablespoons unsalted butter, melted
Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin.
- Blend cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
- Whisk together all-purpose flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Beat eggs, milk, vegetable oil, and vanilla extract together until combined.
- Pour the wet mixture into the dry ingredients and stir gently.
- Toss diced strawberries in a tablespoon of flour to prevent sinking.
- Fold the strawberries into the batter gently.
- Combine the remaining flour, sugar, and melted butter for the crumb topping.
- Spoon the batter into each muffin cup and add cream cheese filling.
- Distribute the crumb topping across each muffin.
- Bake for 18 to 22 minutes until golden brown.
- Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
For a lighter version, consider substituting half of the all-purpose flour with whole wheat flour and reducing the sugar amount.
