Description

Delicious zucchini boats filled with tender shredded chicken and tangy BBQ sauce, topped with melted cheese.


Ingredients

  • 4 medium zucchinis
  • 2 cups shredded chicken
  • 1 cup BBQ sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Olive oil
  • Optional toppings (green onions, cilantro)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the zucchinis by slicing them in half lengthwise and scooping out the center.
  3. Mix the chicken and BBQ sauce in a mixing bowl until well coated.
  4. Drizzle olive oil over the zucchini boats and season with salt and pepper.
  5. Fill each boat with the BBQ chicken mixture.
  6. Top with shredded cheese.
  7. Bake for 20-25 minutes until zucchinis are tender and cheese is melted.
