- 4 medium zucchinis
- 2 cups shredded chicken
- 1 cup BBQ sauce
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- Olive oil
- Optional toppings (green onions, cilantro)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the zucchinis by slicing them in half lengthwise and scooping out the center.
- Mix the chicken and BBQ sauce in a mixing bowl until well coated.
- Drizzle olive oil over the zucchini boats and season with salt and pepper.
- Fill each boat with the BBQ chicken mixture.
- Top with shredded cheese.
- Bake for 20-25 minutes until zucchinis are tender and cheese is melted.
- Serve with optional toppings before enjoying.
Notes
Consider using rotisserie chicken for ease. These can be made ahead of time and stored in the fridge.
