- 1 ripe avocado
- 1 cup corn (fresh or canned)
- 2 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Season the steak with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Cook the steak for 4-5 minutes on each side for medium-rare, or until desired doneness.
- Remove the steak from the skillet and let it rest for a few minutes.
- While the steak is resting, prepare the salad by combining mixed greens, corn, cherry tomatoes, and red onion in a bowl.
- Slice the avocado and add it to the salad.
- Slice the steak against the grain and place it on top of the salad.
- Drizzle with lime juice and serve immediately.
