- 2 flour tortillas
- 1 cup cooked steak, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/2 cup bell peppers, sliced
- 1/2 cup onions, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat, allowing it to shimmer slightly.
- Add the sliced onions and bell peppers. Sauté until they soften and caramelize, approximately 5-7 minutes.
- Warm one tortilla for about a minute on each side until pliable.
- Sprinkle half of the cheese on one half of the warmed tortilla, followed by slices of steak and sautéed vegetables. Top with remaining cheese.
- Place the second tortilla on top and gently press down.
- Cook the quesadilla in the skillet until the bottom is golden brown, about 3-4 minutes.
- Flip the quesadilla carefully and cook the other side until golden and cheese is melted, about 2-3 minutes more.
- Remove from the skillet, slice into wedges, and serve hot.
Notes
Use corn tortillas for a gluten-free option or experiment with different fillings and spices to customize your quesadillas.
