Description

Irresistibly flavorful meatballs featuring seasoned ground beef, fresh herbs, and a crunchy tortilla chip coat, perfect for any gathering.


Ingredients

  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, deseeded and finely chopped
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed tortilla chips
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • 1 can (15 oz) Mexican-style tomatoes with green chilies
  • Fresh lime wedges

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, chopped onion, cilantro, jalapeño, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  3. Add shredded cheddar cheese and crushed tortilla chips to the mixture.
  4. Mix in the beaten egg until well combined.
  5. Shape the mixture into golf ball-sized meatballs.
  6. Heat olive oil in an ovenproof skillet over medium heat. Sear the meatballs until golden brown, about 5 minutes.
  7. Pour the can of Mexican-style tomatoes with green chilies over the meatballs.
  8. Bake in the oven for 15-20 minutes, until thoroughly cooked.
  9. Serve hot, garnished with fresh lime wedges.

Notes

For make-ahead, form meatballs a day in advance and keep chilled. Can be made in an air fryer at 350°F (175°C) for 12-15 minutes.
