A delicious and flavorful Spicy Glazed Chicken Bowl served with creamy hummus, perfect for a quick meal.
Ingredients

- 2 chicken breasts
- 1 cup cooked rice
- 1/2 cup hummus
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon sriracha
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1/2 cup chopped green onions
- 1/2 cup mixed vegetables (bell peppers, carrots, broccoli)
Instructions
- In a bowl, mix soy sauce, honey, sriracha, garlic powder, and ginger powder to create the glaze.
- Marinate the chicken breasts in the glaze for at least 30 minutes.
- Heat olive oil in a pan over medium heat and cook the marinated chicken until fully cooked, about 6-7 minutes per side.
- Remove the chicken from the pan and let it rest for a few minutes before slicing.
- In the same pan, stir-fry the mixed vegetables until tender.
- Assemble the bowl by placing cooked rice at the bottom, followed by sliced chicken, stir-fried vegetables, and a dollop of hummus.
- Garnish with chopped green onions and serve warm.
Notes
- Adjust the spiciness by adding more or less sriracha.
- For a vegetarian option, substitute chicken with tofu.
- This dish can be served cold as a salad as well.
