Ingredients

- 1 can (14 oz) coconut milk
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2–3 tablespoons chili paste (adjust to taste)
- 1 bell pepper, sliced
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic and ginger, cooking for another minute.
- Add chicken thighs and brown on all sides.
- Mix in chili paste, cumin, salt, and pepper.
- Pour in coconut milk and bring to a simmer.
- Add sliced bell pepper and cook until chicken is fully cooked and tender.
- Garnish with fresh cilantro before serving.

- Adjust the level of spiciness by varying the amount of chili paste.
