- 1 cup quinoa
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1 cup carrots, diced
- 1 cup sweet potatoes, diced
- 1 cup kale, chopped
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain.
- In a pot, bring the vegetable broth to a boil and add the quinoa. Reduce heat, cover, and simmer for 15 minutes.
- In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté until translucent.
- Add the cumin, coriander, and cinnamon, stirring for 1 minute until fragrant.
- Add the carrots and sweet potatoes, cooking until tender, about 10 minutes.
- Stir in the kale and cook until wilted.
- Combine the quinoa with the vegetable mixture, season with salt and pepper, and serve warm.
