Ingredients

  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and place cut-side down on a greased baking sheet. Roast for 30 to 40 minutes until tender.
  3. While the squash roasts, heat olive oil in a large skillet over medium heat. Sauté chopped onion and minced garlic for 2 to 3 minutes until fragrant.
  4. Add ground turkey, breaking it apart, and cook for 5 to 7 minutes until no longer pink.
  5. Stir in chopped bell pepper and drained diced tomatoes, adding Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. Use a fork to scrape the roasted squash into strands and mix with the turkey mixture in the skillet.
  7. Transfer to a greased 9×13-inch baking dish, sprinkle mozzarella and Parmesan cheese on top, and bake for 20 to 25 minutes until cheese is bubbly.
  8. Garnish with fresh basil before serving.

Notes

Make-ahead option available: Prepare turkey mixture and roast squash a day before. Store separately and mix before baking.
