- 1 medium spaghetti squash
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, drained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the spaghetti squash in half lengthwise, scoop out the seeds, and place cut-side down on a greased baking sheet. Roast for 30 to 40 minutes until tender.
- While the squash roasts, heat olive oil in a large skillet over medium heat. Sauté chopped onion and minced garlic for 2 to 3 minutes until fragrant.
- Add ground turkey, breaking it apart, and cook for 5 to 7 minutes until no longer pink.
- Stir in chopped bell pepper and drained diced tomatoes, adding Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Use a fork to scrape the roasted squash into strands and mix with the turkey mixture in the skillet.
- Transfer to a greased 9×13-inch baking dish, sprinkle mozzarella and Parmesan cheese on top, and bake for 20 to 25 minutes until cheese is bubbly.
- Garnish with fresh basil before serving.
Notes
Make-ahead option available: Prepare turkey mixture and roast squash a day before. Store separately and mix before baking.
