Ingredients

- 8 oz pasta (your choice)
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 2 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside to cool.
- In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes. Remove from heat and let cool.
- In a large bowl, combine the cooled pasta, shrimp, cherry tomatoes, red onion, bell pepper, and parsley.
- In a separate bowl, mix together the mayonnaise, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like cucumbers or corn for extra crunch.
- This salad can be made a day in advance for better flavor.
