A refreshing and flavorful Southern Shrimp Pasta Salad perfect for summer gatherings.


Ingredients

  • 8 oz pasta (your choice)
  • 1 lb shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside to cool.
  2. In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes. Remove from heat and let cool.
  3. In a large bowl, combine the cooled pasta, shrimp, cherry tomatoes, red onion, bell pepper, and parsley.
  4. In a separate bowl, mix together the mayonnaise, lemon juice, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta mixture and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
