- 1 lb shrimp, peeled and deveined
- 2 medium zucchinis, spiralized
- 1 ripe avocado
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Add minced garlic and sauté until fragrant.
- Add shrimp to the skillet and cook until pink and opaque.
- In a blender, combine avocado, lemon juice, salt, and pepper to make the sauce.
- Add spiralized zucchini to the skillet and cook for 2-3 minutes until slightly tender.
- Remove from heat and toss with the avocado sauce.
- Serve in bowls, topped with shrimp and garnished with fresh cilantro.
Notes
- For a spicier kick, add red pepper flakes to the shrimp while cooking.
- Make sure not to overcook the zucchini noodles to maintain their texture.
