Ingredients

  • 1 block firm tofu, pressed and cubed
  • 1 cup BBQ sauce
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cubed tofu with BBQ sauce until well coated.
  3. On a sheet pan, arrange the tofu, broccoli, bell peppers, and onion.
  4. Drizzle with olive oil and season with salt and pepper.
  5. Bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the tofu is caramelized.
  6. Serve hot and enjoy!

  • For extra flavor, marinate the tofu in BBQ sauce for 30 minutes before baking.
