- 1 block firm tofu, pressed and cubed
- 1 cup BBQ sauce
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the cubed tofu with BBQ sauce until well coated.
- On a sheet pan, arrange the tofu, broccoli, bell peppers, and onion.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 25-30 minutes, stirring halfway through, until the vegetables are tender and the tofu is caramelized.
- Serve hot and enjoy!
Notes
- For extra flavor, marinate the tofu in BBQ sauce for 30 minutes before baking.
- Feel free to add other vegetables like zucchini or carrots.
