Description
Decadent Brie bites wrapped in flaky puff pastry, coated with crunchy pistachios and flavored with honey, lemon, and thyme.

- 12 oz (340 g) Wheel of Brie
- 1 Sheet Frozen Puff Pastry
- ¾ Cup Unsalted Pistachios, Finely Chopped
- 2 tbsp Fresh Thyme Leaves, Minced
- ½ tsp Sea Salt
- 2 tbsp Honey
- 1 tsp Fresh Lemon Juice
- 1 tsp Dijon Mustard
- Freshly Ground Black Pepper, to Taste
- Egg Wash (1 Egg + 1 tbsp Water)
Instructions
- Cut the Brie into twelve 1½-inch cubes.
- Pat the Brie cubes dry with a paper towel.
- Roll out the puff pastry to about ¼ inch thick.
- In a shallow bowl, combine pistachios, thyme, and sea salt.
- Cut the puff pastry into 4-inch squares and place a cube of Brie in the center of each square.
- Brush the edges with egg wash and add honey, lemon juice, Dijon mustard, and pepper on top of the cheese.
- Fold corners of pastry over Brie and pinch to seal, then dip each package into the pistachio mixture.
- Place on a lined baking sheet, brush tops with egg wash, and bake at 375°F (190°C) for 15-20 minutes until golden brown.
- Let cool for 3-4 minutes before serving warm.
Notes
Make ahead by preparing the bites a day in advance; store in the fridge and bake before serving. Can substitute Brie with Camembert, goat cheese, or cheddar.
