- 2 cups cooked chicken, shredded
- 1 cup salsa verde
- 1 cup cottage cheese
- 1 cup cooked brown rice
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 avocado, diced
- 1/2 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken and salsa verde. Mix well to coat the chicken.
- In serving bowls, layer the cooked brown rice as the base.
- Add a generous scoop of the salsa verde chicken on top of the rice.
- Next, add the black beans and corn evenly over the chicken.
- Top with cottage cheese, diced avocado, and chopped cilantro.
- Drizzle with lime juice and season with salt and pepper to taste.
