Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Combine Wet Ingredients: In a large bowl, mix together the ricotta, mashed bananas, sugar, and melted butter until smooth.
- Add Eggs and Vanilla: Stir in the eggs and vanilla extract until well-blended.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt with the citrus zests.
- Mix the wet and dry ingredients together, being careful not to overmix.
- Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake: Place in the oven and bake for 20-25 minutes, or until a toothpick comes out clean.
- Cool and Serve: Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
