Ingredients

  • 60 g tapioca pearls (sago)
  • 400 g watermelon (divided into two portions)
  • 400 ml coconut milk
  • 1000 ml water (for cooking tapioca)

Instructions

  1. Bring 1000 ml of water to a rolling boil in a medium pot.
  2. Add in the tapioca pearls, stirring gently.
  3. Reduce heat to medium. Cook the pearls for about 15 minutes, stirring occasionally, until they turn translucent.
  4. Remove from heat and let the pearls sit for an additional 15 minutes.
  5. Rinse the cooked sago pearls under cold water.
  6. Slice the watermelon into two portions.
  7. Cube half of the watermelon into bite-sized pieces.
  8. Blend the remaining watermelon until smooth.
  9. Strain the puree for a smoother texture, if desired.
  10. Combine the cooked sago pearls with watermelon cubes and coconut milk in a mixing bowl.
  11. Pour a layer of watermelon puree into the bottom of serving glasses.
  12. Carefully add the sago mixture on top.
  13. Garnish with more watermelon pieces and a drizzle of coconut milk.
