Delicious almond cookies filled with raspberry jam, perfect for holiday celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • 1/2 cup powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Add the vanilla and almond extracts, mixing well.
  4. Gradually add the flour and salt, mixing until just combined.
  5. Shape the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Make a small indentation in the center of each ball and fill it with raspberry jam.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Allow to cool slightly, then dust with powdered sugar before serving.
