- 1 cup granulated sugar

- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop tablespoon-sized amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are set. Let cool completely.
- In a separate bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
- Spread a generous amount of cream cheese filling on the flat side of one cookie and top with another cookie to form a sandwich.
- Repeat with remaining cookies and filling.
Notes
- Store in an airtight container in the refrigerator for up to a week.
- For a spicier flavor, add more cinnamon or a pinch of cloves.
- These can be frozen for up to 3 months; just thaw before serving.
