Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Maple syrup for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  2. In another bowl, mix the pumpkin puree, milk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Preheat the waffle iron and lightly grease it.
  5. Pour the batter onto the waffle iron and cook according to the manufacturer’s instructions until golden brown.
  6. Serve warm with maple syrup drizzled on top.

Notes

  • For a richer flavor, use brown sugar instead of white sugar.
  • Make sure to use pure pumpkin puree, not pumpkin pie filling.
  • These waffles can be frozen and reheated in a toaster for a quick breakfast.
